Potato and Leek Soup

A bounty of beautiful leeks were in subscriber’s boxes last Wednesday. Before becoming a subscriber last year I don’t recall ever having fresh leeks in our fridge. This year, I’ve vowed to be more ambitious with the veg, not just stir fries. With the wet, chilly weather we’ve been having it seemed appropriate to try making soup. I know, potato leek soup, that sounds like winter comfort food. Well, it’s spring in western washington, soup is on! So in the Central Market parking lot, a quick iPhone google turned up this winner:

82 reviews, 5 stars, it must be good. And it was. I followed the recipe, but many reviewers made substitutions and still loved the results. We still have leeks left to stir fry, I think a quiche is too advanced for this cook. I must admit this is the first (but not the last) time I’ve made soup that didn’t involve opening a can.

Easy Bok Choy

1 T oil

1.5 lbs bok choy

1 T light soy sauce

2 T chicken stock or water

Heat wok over moderate heat. Add oil and then bok choy. Stir fry 3-4 minutes, until leaves have wilted a little. Add soy sauce and chicken stock/water.

Continue to stir fry for a few more minutes, until the bok choy is done until still slightly crisp.

For almost 10 years, Joe Brazeau was Persephone’ For almost 10 years, Joe Brazeau was Persephone’s go-to guy for everything from turning the compost to irrigation troubleshooting to relocating a tiny house. He shared his tools and his know-how with many years of interns and was a strong and light-hearted friend in the face of the myriad challenges of farming. The farm wouldn’t exist as it is today without his help, and he is dearly missed. RIP, Joe. Thank you for everything.

We’ve decided last week will be our final @bifarmersmarket of the year so we can prioritize our CSA. 🥶 Yesterday morning we opened the fridge to fin 🥶 Yesterday morning we opened the fridge to find that it had decided it would rather be a freezer. This affected not only our CSA harvest, but our restaurant, Kitsap Fresh, and food bank orders as well. This amounts to a lot of food and labor hours in the compost. We tried to salvage or replace what we could, but of course, if you received something damaged that we missed, please reach out!

We are so grateful to our subscribers and community members for being so understanding in the face of a hard situation. And of course, we are grateful for each other- our amazing team was able to still have a pretty successful day in the face of it all. #walkinblues #farmlife #earlyfrost
